Sweet cottage cheese cornbread



The main ingredients in this easy homemade cottage cheese cornbread are eggs, cornmeal, and cottage cheese.

This cornbread is light but very fulfilling. It is the best served warm, so don’t hesitate to have a slice straight from the oven. Serve it with homemade jam or coffee, for a super wholesome breakfast.


Ingredients:

3 eggs
6 tbsp sugar
1 tsp vanilla extract
100 ml sunflower oil
200 ml yogurt
200 ml milk
2 cups of corn meal polenta
1 cup soft flour
1 cup strong white flour
14 g baking powder
pinch of salt

200 - 300 g cottage cheese





Preparation:


Preheat the oven to 180°C. Grease baking pan with butter.

In a bowl mix dry ingedients, corn meal polenta, soft flour, strong white flour, baking powder.

In separate bowl beat the eggs, sugar and vanilla extract. Stir the dry ingredients into the wet ingredients.

Add yogurt and cottage cheese. Lightly wisk the mixture and pour into the baking pan.

Bake around 30 – 35 minutes, or until the cornbread is nicely golden brown color.
Serve warm, with cottage cheese, homemade jam and coffee or tea.
