Crunchy oatmeal cookies by Gigi
These oatmeal cookies, both simple and cute, don't
require much time to make.
They are crunchy,
covered in chocolate, and super addicting.
Ingredients:
1 large egg
100 g butter
6 g baking powder (around half package)
3 cups
all-purpose flour
8 tbsp oatmeal
4 tbsp sugar
orange zest
1
teaspoon vanilla extract
50 g of dark
chocolate for decoration
Preparation:
Preheat oven at 180°C.
Line a
baking pan with parchment paper and set aside.
In a separate bowl mix flour, baking
powder, oatmeal, orange zest.
Cream together butter and sugar, until
combined.
Beat in egg and vanilla extract until
fluffy.
Mix in the dry ingredients until combined.
Roll 1
tbsp of dough at a time into balls and place them evenly spaced on your
prepared cookie sheet. From these
amount of dough you will get around 26 crunchy cookies.
Bake in preheated oven for approximately 8 -
10 minutes.
When cookies are cooled, decorate them with
melted chocolate.
Bring about an inch of water to a simmer in
your saucepan.
Set the smaller heatproof bowl in the mouth
of the pot, making sure the water doesn't
touch the bottom of the bowl.
Stir 50 g of dark chocolate occasionally as
it softens.
When you have few small unmelted chunks,
remove bowl from heat.
Decorate crunchy cookies how ever you want,
be creative and have fun!
Extra tip:
In the dough is only 4 tbsp of sugar, if
you want sweeter cookies add more.
When you decorate cookies with chocolate,
they are sweet enough.
